So I am a proud new owner of a 20" 7.62x54 VEPR. I have since added a POSP 8x42BDC-PRO, which I really like. However, when I took it to the range today for sight-in, I was unable to get anything even resembling proper cheek-weld. I assume the only way to fix this is with a new stock. I have been searching the internet and have found a number of choices ranging from dragunov replicas to M4 conversions. I really need something with an adjustable cheek piece. any suggestions form the community?

You can put on an adapter and go to M4 collapsible. Canis Design makes one. Ive never seen a scope sit that far back. Personally I like a good QD scope mount with some good Ole fashioned crosshairs. Much easier to get proper eye relief and comfort. Those rifles in sporting configuration are very comfy to me.

I've got a 20" Vepr as well, with a very similar scope (POSP 8x42 w/Dragunov reticle). When I'm using the iron sights I get a good cheek weld, when using the scope it's more like a chin weld. I've been stalking the SVD style stocks from Legion and IWD, but I don't know that the expense of either will be worth the outcome, as I'm pretty sure that the cheek weld will still differ from the one I get with iron sights. I've just been practicing with the chin weld, and actually seeing noticeable improvement in my groups with the intensified practice. Keep shooting and you might get used to it as I have.

Not sure about a cheek piece but with that scope set that far back you're going to hit your eye. Needs to come forward. Welcome!

Rhineland Arm's vepr stock has an adjustable cheek rest.

They come unfinished, this is just a Google search result of a finished one:

I use one and like it.
